Beer and Pasta salad

happy monday! i hope you all had a fabulous weekend! we spent our sunday relaxing, grocery shopping, cooking and going on our first bike ride of the season. we are training for a half-ironman distance race, the tawas triathlon festival. the race is on september 10th, so we have plenty of time to prep. this race is going to be no joke! we biked for 21.5 miles, which was pretty rough for me. i rarely get winded on bike rides, but my shoulders and neck tighten up and i get antsy, if that makes any sense. but it was our first ride, so i’ll cut myself some slack.

we stopped to stretch once during the ride, and john mentioned the pasta salad he had seen in this month’s runner’s world. it sounded delicious (but what doesn’t sound great during a  20 mile bike ride?), so we made a trip to the grocery store to grab ingredients.

we made plenty of substitutions, starting with the pasta. i couldn’t find any gluten free bow ties at the food co-op, but grabbed some fusilli that worked just fine. instead of the bulgar, which are whole wheat kernels with the bran removed, we used some quinoa. finally, we nixed the feta and i stirred in some cashew cheeze. recipes for this vary, but the basis is always raw cashews, nutrional yeast, and lemon juice. throw em all in the food processor with a touch of water until it’s creamy. it was delicious, and i love how colorful it is!

john drank this delicious brew over the course of the night, great divide’s chocolate oak aged yeti imperial stout! he loves this beer, but at $12 per 22 oz bottle it is a very rare treat.

i had a small glass of red wine, which was perfect.

 today was filled with errands, and  i just got back from doing a little bit of this with the pooch…
