Happy Sunday! Hope you’ve had a relaxing weekend, mine went by quick! Last night I ran an 8 mile race with my friend Laura, it was a blast!
Today I’m sharing a meal that I’ve been making for about a year now. Caitlin of Healthy Tipping Point inspired me to try it, and I’ve been hooked ever since.
baked beans + sweet potato + kale = delciousness.
simply cook your sweet potato, warm your beans, cook your kale and combine!
I really need to try kale. I’ve been hearing a lot about it, but just haven’t investigated it at the store. That looks like a really good combination. I like sweet potato with peanut butter on them.
I cannot get enough kale! The above portion is a whole bunch of it! 🙂 You can steam it, braise it, or bake it and make kale chips!

simple is best for sure. quinoa, kale and squash is my trifecta of choice right now.

I love kale! I love making kale chips or massaging avocado into it! I think soups, smoothies and avocado wraps are my go to!
