Chocolate Banana Blueberry Muffins

…otherwise known as the best way to start your sunday! i hopped out of bed and got right to work on these beauties, recipe found here, at clean eating chelsey. chelsey and i have a lot in common, we are both teachers, gluten free, vegan (for the most part), and love going on a long run.

i was so excited to try these because she uses my most favorite protein powder, sunwarrior, in these muffins. on their own, baked goods don’t do much for my satiety. but throw some protein in there and i’m good to go! (literally, i had 3 for breakfast!)

i wish i had a grill to try cooking them in, but since we don’t i baked these in the oven @ 325 for 17 minutes.

modifications
-instead of chocolate sunwarrior, i used vanilla. i grated in that mini bar of dark chocolate i got last weekend at starbucks instead. yum.
-i only added blueberries to half of the muffins since john isn’t a fan.
-i used trader joe’s agave nectar/maple syrup blend for all of the liquid sweetener.

in other news, i’m super excited to dive into these new mags i picked up yesterday. i love magazines, and have to limit myself or i’d pick a new one up every trip to the store.

the most exciting part of these two reads is the wedding feature in this month’s vegnews!

since we are in the very early stages of wedding planning, i love everything i can get my hands on. we are having a vegetarian bash, which makes this article even more exciting and inspiring!

    Your blog is looking awesome! Did you take some serious photography classes? The pics are so gorgeous – saturated and unique perspectives! I’ve never used protein powder in baking, definitely giving this a try.

      hi heather!! how’s life overseas? your comment is so sweet, thank you! no, i’ve never taken a photography class, just learned from reading plenty of food blogs. i’m glad you think they look good! the protein powder was undetectable and kept me full, which means more muffins in my future!!
